このテラスを仕切っていた者は、雰囲気を売るレストランは食事の前に雰囲気が始まる必要があることを理解していた。青いポストに縛られた素焼きの鉢の並びが、ちょうど目の高さで赤とピンクのゼラニウムを溢れさせている様は、偶然に任された装飾ではなく、旅人たちが記憶し他の旅人に伝えるような場所を運営するための固定費だったのだ。

小さく塗られた門の向こうでは、実際の営業が大した儀式もなく行われている。ポンチョと帽子をかぶった男たちが昼食にかがみ込み、白いジャケットのウェイターがテーブルを回り、トウモロコシの芯が扉の上に乾すためにぶら下がっている。このテーブルの誰もが存命だった時間より長く農場がしてきた方法だ。青と赤の塗装は、これが応急的な小屋ではなく故意に手入れされた施設であること、手すりと鉢に実際の金をつぎ込みながら木製の椅子をまさに必要なほど素朴なままにしておく高地沿道の停留所の類いであることを示している。

ダイニングテラスを開かれた通路から分ける低い柵は、通過する商いのために造られた場所でこのような柵がいつもする唯一の仕事を果たしていた。それは見知らぬ人に穏やかに告げることだ。内側のテーブルは代価を払う価値があり、外のベンチはそうではないということを。
